The cuisine served within the Chateau's world-class restaurants must be as memorable as the view. Undaunted, Executive Chef Dominique Guyot has risen to the challenge with grace and his own refreshing style.
Joining Canadian Pacific Hotels following his move from Paris to Canada in 1980, Guyot began his professional ascent in the Canadian culinary world at The Fairmont Banff Springs. In 1982, he parlayed his creative menus and artistic ability into the position of Executive Sous Chef at the Chateau. In 1994, Guyot became Executive Chef, where he continues to thrive.
Guyot's success at the Fairmont Chateau Lake Louise encompasses his expertise as a Chef, his passion as an artist, and his relationship with the place where he lives. Their Executive Chef's gastronomic themes are inspired by the natural abundance found in the wild.
Additionally, Guyot is an accomplished ice-sculptor and teacher, who mentors his apprentices in the art of transforming a blank canvas of solid ice into a glistening work of art. With a strong connection to this mountain environment, Chef Dominique Guyot is carving his niche in Canadian cuisine.

Lobby Bar
One architectural element exemplifies why the Chateau's Lobby Bar is so special. Seen through the room's signature Palladian window, the awe-inspiring Victoria Glacier, surrounding Rocky Mountain peaks, birds circling the forested slopes and dramatic sunsets. A Canadian treasure of fine beverages, glorious views and classic style, this perfectly situated nook is far more than just a place for drinks.
Certainly, the knowledgeable staff is quick to serve the libation of your choice, whether your pleasure is a Bloody Mary, a modern take on the Martini or a cherry-flavored Belgian beer - one of a dozen tastefully varied imports available. But they are just as pleased to brew a perfectly frothy cappuccino or decadent specialty coffee, or present a palate-pleasing glass of smooth red or crisp and fruity white wine. A menu of innovative small bites and indulgent sweet endings round out the Lobby Bar's extensive offering and provide the perfect nibble.

Poppy Brasserie
Early-risers who want to kick-start a day of sightseeing, skiing or hiking, can catch the first rays of morning light on the mountain peaks opposite the Poppy Brasserie's expansive windows.
You'll be greeted with offers of fresh orange juice, coffee and tea, followed by a menu of gourmet choices. Or dine like the hearty mountaineers who first ascended these towering peaks at the generous Alpine Breakfast Buffet, with its wide selection including eggs made to order, meats and cheeses, luscious fruit, freshly baked breads and pastries.
Later, drop by for a leisurely lunch, an early dinner or just for dessert. The Poppy's a la carte menu showcases many international specialties including Italian-inspired Crostini Bruschetta with herb boursin cheese and ripe olives and southern spiced Crab Cakes with an ancient mustard remoulade. Main course choices also span the globe from a gooey Croque Monsieur sandwich with crisp green salad to classic English-style Fish and Chips. Be sure to save room for dessert - try the decadent Chocolate Lava Cake.

Glacier Saloon
Swing through the doors of the Glacier Saloon for a footloose and fancy-free journey to the wild west. The friendly spirit of the legendary cowboy brands this casual place to meet and mingle where you will feel equally comfortable in jeans or elegant dinner suits and dresses.
